We were very fortunate this August to have our very own Guest Chef staying at The Retreat @ Le Grand Bois, Chris who owns & runs two excellent restaurants back in the United Kingdom, which go under the names "Essence" in Alcester, and his newest venture is "Essence at Old Red Lion Court, in the very popular & touristy Shakespeare town of Stratford Upon Avon, also in Warwickshire, where he has the No1 rated Restaurant on Trip - Adviser. Please note Chris was on his family holiday & consequently didn't have his "Whites" with him !
Chris cooked a fantastic meal for us all in the kitchen here at Le Grand Bois using our Induction Hob, plus the twin Steam & "Cook & Hold" ovens we installed prior to opening our doors at Le Grand Bois. Chris & I met about 10 years ago when I was chosen to design & install the new bespoke commercial kitchen at a large & very up-market restaurant in Stratford Upon Avon where Chris was the Executive Head Chef, & we have remained in contact and very good family friends ever since.
The dinner; almost ready for serving, we had very fine & perfectly cooked local Duck breast, with home made Rosties, on a bed of pureed Sweet Potato, plus local seasonal vegetables, & a little side dish of Confit de Canard, it was fab, and so nice to have someone else cook for a change, and to cook so very well too !
Just have to say Chris & his Shorts are welcome back anytime, his Shorts being his smashing wife Gail, & wonderfully well behaved children; Ellie & Oliver,
